Cuban Yuca con Mojo
2 cups jugo de naranja agria (sour orange juice)
1 medium onion chopped
3 cloves garlic, chopped very fine
1 tsp. oregano
3/4 tsp. cumin
Add pan drippings from roasted pork, and heat to boiling. Serve
with yucca and roast pork.
Similar recipe is used to marinate pork before roasting - increase
onion and seasonings.
