Rice and Peas
Jamaica

Make 1 1/4 qts of coconut milk by adding water to grated coconut,
straining through sieve OR add 1 packet of coconut cream to water.
Clean 1/2 pt. red peas of grit, wash and add to milk. Boil until
tender. Add 1 sprig thyme, 2 slices hot pepper. Simmer for 2
minutes. Add 1 lb. washed rice, making sure the liquid is about
1 inch above rice. Bring to a boil, cover, then turn to low heat
until liquid disappears and rice is cooked. Serve with Fricassee
Chicken and fried plantain, or meal of your choice.
