Cowboy Cassoulet
8 chicken drumsticks, skin removed 8 ounces lowfat smoked sausage, sliced 2 16-oz cans barbecued baked beans 15 oz can whole kernel corn 15 oz can black beans, rinsed and drained 1 3/4 cups frozen baby lima beans, thawed 1 1/2 cups chopped onions 8 oz. can tomato sauce 1 1/2 cups broken corn tortilla chips, crushed
Heat oven to 375 degrees. Have a shallow 3-quart baking dish ready. Mix all of the ingredients except corn chips in baking dish. Cover and bake 1 hour. Uncover, sprinkle with chips and bake, uncovered, 15 minutes longer or until the chicken is cooked through.

The cassoulet was very tasty. I found that I was most puzzled with the chicken drumsticks--hard to skin drumsticks by the way. And when mixing everything together it was interesting trying to stir the drumsticks. For variation, I might skip the chicken and add more sausage. Nonetheless, it was good and I think it would be super for a potluck meal.
