MEAL IN ONE DISH
2 tablespoons oil or margarine 1 medium onion, diced 1 green bell pepper, diced 1 pound lean ground beef 1 tablespoon salt (less if desired) 1/2 teaspoon black pepper 1 large can tomato sauce 1 large can French cut green beans 4 medium potatoes, cut into cubes 4 or 5 medium carrots, thinly sliced 1 cup grated cheddar cheese 1 cup bread crumbs
In a large pot or Dutch oven, saute onions and bell pepper in oil until soft but not brown. Add ground beef, salt, and pepper and cook until meat is just brown. Add tomato sauce, green beans, potatoes, carrots, and enough water to keep the mixture from being too dry. Simmer until potatoes and carrots are tender, at least 30 minutes. For best flavor, stop at this point and refrigerate until the next day.
If you want to eat the casserole the same day, keep going. It's still good the first day.
Pour the entire mixture into a casserole dish and cover with bread crumbs and cheese. Bake at 450 degrees F until cheese is melted and bread crumbs are brown.
