BROWN FISH STEW
2 pound large snapper 1 sliced onion pepper and salt fat for frying 1 tablespoon butter water or stock 1 tablespoon flour
2 cups chinese vegetables (bean sprouts, Bok choy, broccoli, celery cabbage, green beans, mushrooms, peas, etc) chopped
1/2 cup chicken broth 1 tablespoon corn starch
2 tablespoons soy sauce 1 teaspoon sugar
Either steam vegetables with a little salt and pepper or do the following: Heat skillet add oil and heat throughly. Fry scallion or onion till golden brown. Add vegetables and quick fry for 3 minutes. Add soy, sugar, stock and flour and fry for 2 minutes. Set aside.
Prepare the fish by cutting it crosswise in 1 inch thick slices. sprinkle on a bit of salt and pepper. Fry it lightly. Make a brown sauce by frying onion in butter and adding flour slowly until brown. Add water or stock to thicken and also more pepper and salt to taste. Place the fish in a deep frying pan. Pour on the sauce and allow to simmer for 15 minutes, turning the fish once. Add steamed vegetables. Spoon over sauce and heat through.
