SEARCH RECIPES: LOCATION: Recipes >> Casserole Recipes >> Joes Special    Joes Special Joe's Special Yield: 4 servings 1/2 lb spinach, chopped or a 10 oz pkg frozen chopped spinach, thawed 1 tb olive oil 1 tb butter or margarine 1 lb ground beef or turkey 1 onion, diced 1/2 ts basil 1/4 ts marjoram 1/4 ts oregano 1 ts salt 1/4 ts black pepper 4 eggs If using frozen spinach, place in strainer and drain well. Heat oil and butter in large, heavy skillet. Add ground meat and cook, stirring, until browned and crumbly. Add onion, and cook until tender but not browned. Stir in spices. Stir in drained spinach and cook until liquid has evaporated. Beat eggs, add to meat mixture and cook, stirring, until eggs are set. Makes 4 to 6 servings. A fresh loaf os Sourdought and a nice white wine and life is good.Always enjoy making this dish as it brings back good times gone by. I put mushrooms (squeezed or shitake dry and soaked) in mine, otherwise just follow the recipie.
