Lecso (Pronounce: lecho)
1 kg yellow, sweet Hungarian peppers, sliced in 1/2" slices 1 kg ripe tomatoes, peeled 1 large onion, chopped 2 tablespoon oil 1 cup rice Salt to taste Debreceni sausages (1 per person) or pair of wieners per person
Drop tomatoes into boiling water for 30 seconds - peel comes off easily.
Brown onions in oil. Add all ingredients except sausage. Combine well, then turn heat down very low and cook about 1/2 hour. Now add sausages and cook for another 10 minutes. There should be no need to add water. If still watery, cook a little bit longer until all juice absorbed.
