Pumpkin Stew Heat some oil in a large pot, fry until glassy 1 to 2 chopped onions, 2 to 3 cloves garlic and 2 tablespoons chopped fresh ginger, add 1 to 2 handfulls raisins, 1 kg pumpkin, cut in cubes, 2 to 3 tablespoons vinegar, 2 teaspoons sugar, 1/2 liters vegetable broth, salt and pepper or chili pepper to taste, simmer for about 30 minutes, until the liquid has become saucy. Serve over rice.
