Texas Meat Skillet Serving Size : 6 2 cup ground beef 1/2 cup water 14 1/2 ozs crushed tomatoes 15 1/2 ozs dark red kidney beans, undrained 1 cup long-grain rice, cooked 1/2 cup bell peppers, chopped 2 tsps chili powder 1/2 tsp salt 1/2 cup fat-free cheddar cheese, grated 1 cup low-fat tortilla chips, crushed
In a skillet, combine Ground Meat Mix, and water. Cover and cook over low heat for 15 minutes. Break up meat with a fork. Stir in crushed tomatoes, kidney beans, rice, bell peppers, chili powder, and salt. Bring mixture to boiling; reduce heat. Cover and simmer for 20 minutes, stirring occasionally. Sprinkle cheese and tortilla chips over meat mixture.
