TURKEY (OR BEEF) AND CORN DUMPLING CASSEROLE 1 pound ground turkey (or lean ground beef) 1 small onion, chopped 2/3 cups beef broth 1/2 tsp sage 1 tbs vegetable oil 1 can (8 ounces) tomato sauce 1/2 tsp salt 1/2 a green pepper, chopped 2 cloves garlic
1/2 cup corn meal 1/2 tsp baking powder 1/4 tsp dried rosemary 1/4 cup milk 2 tbs flour 1/4 tsp salt 1 egg 1 1/2 tsp vegetable oil
In a heavy skillet brown the turkey (or beef) in oil, breaking up meat with spoon, about 5 minutes or until lightly browned. Add remaining ingredients, except the dumplings. Bring to a boil; reduce heat, cover and, stirring occasionally, simmer for 15 minutes. Meanwhile, mix all the ingredients for dumplings in large bowl. Drop by tablespoonfuls into the meat mixture. Cover and simmer for 10 minutes or until the dumplings are firm. Makes about 4 servings.
