Chili
1/4 pound bacon chopped 2 onions chopped 6 cloves garlic minced 2 pounds of ground beef (or 1 pound ground beef and one pound ground pork) 6 jalapeno peppers chopped 6 tablespoons chili powder 1 tablespoon oregano 1 teaspoon ground cumin 2 teaspoons salt 1 tablespoon powdered cocoa 3 tablespoons worchestershire sauce 1 tablespoon cider vinegar 1 28 ounce can of tomato sauce or tomatoes.
Saute bacon until clear. Add onion and cook until translucent. Add garlic and cook about 3-4 minutes. Add ground beef and peppers. Cook until beef is browned. Add remaining ingredients and simmer for 1 hour. If it seems to dry out add some water or tomato sauce. You can, if you like, add some cooked pinto or kidney beans at this point and cook another hour to meld the flavors.
This is a relatively mild chili. If you want it hotter, add more jalapenos.
