Chili
1 lb. lean ground beef 1 large green bell pepper, chopped 2 cups chopped onion 3 cloves garlic, minced 1 1/4 tsp. salt 1/4 tsp. black pepper 2 tsp. chili powder or more 1 tbsp. ground cumin 15 oz can kidney beans, or chili hot beans 28 oz. can whole tomatoes, cut up, with juice 1 cup picante sauce 8 oz. fresh mushrooms, chopped
Brown ground beef, onions and green pepper until meat is done and onions are translucent. Drain off fat.
Add spices, beans, tomatoes and picante sauce. Bring to a boil, then add mushrooms, and reduce heat to med./low. Simmer 10-20 minutes until mushrooms have cooked down into the chili.
