Chili
2 pounds ground beef 1 medium yellow onion, chopped 1 clove garlic, minced or pressed 2 15 oz cans kidney beans 3 cups tomato juice 1/4 cup chili powder 3/4 teaspoon cayenne pepper, optional 1/2 cup flour, all-purpose, or more if needed salt, to taste
Brown the ground beef in a large, heavy pot. Drain.
Add the chopped onions, garlic, kidney beans, tomato juice, chili powder and cayenne pepper and heat to a simmer.
Add the flour (I use all-purpose but anything that will thicken will do) and stir it in well.
Simmer for at least 30 minutes.
