Carne con Tomatos

1 lb. ground beef
4 large roma tomatos
1 med onion
2 med seeded and viened serrano peppers
1 small potato chopped into very small peices
salt to taste
1 Tbs. veg.oil
warmed corn tortillas or tortilla chips

Chop in very small peices the tomatos, onion, potatos, peppers,
and potatos. In a pan cook the potatoes in oil until almost done,
add peppers and cook until soft. Add onion and cook until tender.
Add the ground beef and break up meat and cook until almost browned,
then stir in the tomatoes. Cook over medium heat until the tomatos
are hot. Cover and reduce heat to low and simmer for about 20
minutes. Serve with warmed tortillas or tortilla chips.
