Chili Con Carne

2 tablespoons vegetable oil
1 cup coarsely chopped onions
1 cup coarsely chopped green bell peppers
2 teaspoons minced garlic
1 1/2 pounds lean ground beef or turkey
2 cups canned crushed tomatoes
2 cups beef broth
3 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon dried oregano
15 1/4 oz can kidney beans, rinsed and drained

In a large stock pot over medium heat, add the oil. Add the onions
and green bell peppers and saute until softened, 3 to 5 minutes,
stirring frequently. Add the garlic and cook for 1 minute, stirring
constantly. Add the ground beef and cook for 5 to 8 minutes, or
until just cooked through, using a fork or spatula to break up
the meat into small pieces. Add the tomatoes, broth, chili powder,
cumin, salt, cayenne pepper, and oregano and stir to combine.
Bring to a boil. Add the kidney beans. Reduce the heat and simmer
for 45 minutes, or until thickened and the flavors have melded,
stirring occasionally.
