Cashew Chili

2 onions, minced
2 green peppers, chopped
2 stalks celery, diced
3 cloves garlic, minced
1 bay leaf
1 tsp. each basil, oregano, ground cumin
1 tsp each salt, pepper
2 Tbsp. chili powder
2 cups cooked kidney beans
1/4 cup red wine vinegar
1/2 cup cashews
1/4 cup raisins
1 can (28 ounces) diced tomatoes

Heat some olive oil in a large pot. Over a medium heat, saute the
onions until clear. Then add the green peppers, celery and garlic
and continue cooking for about 5 minutes. Then add the basil,
oregano, cumin and chili powder and mix well with the vegetable
mixture. Then add the can of tomatoes mixing well. Lastly, the
kidney beans, vinegar, cashews, raisins, salt and pepper. Mix
everything. Bring to the boil and then simmer with the lid on for
about 1.5 hours. Make sure to check it periodically and give and
good stir.
