Vegetarian Chili

Soak 1 packet textured vegetable protein for 10 minutes with 1
vegetable stock cube, then drain. Fry 2 medium onions and 3 cloves
garlic until brown then add 1/4 pound mushrooms (optional mixed
red, green peppers).

Add mixed spices: chili, cumin and dash of cinnamon Stir in TVP.
Add large jar of tomato puree, tin of tomatoes. Add sprinkling of
mixed herbs and stock cube. Simmer for 1 hour adding water as
necessary. Add tin of kidney beans, 1 tablespoon brown sugar, and
1-2 tsp vinegar.

Serve with long grain or brown rice and garlic bread.
