Low Fat Chili No-con Carne
1 large onion, finely chopped
14.5 oz can black beans
14.5 oz can small white beans
14.5 oz can red beans
2 16-oz cans stewed tomatoes
14.5 oz can cajun-style stewed tomatoes
10 oz can diced tomatoes and green chilies
1/4 cup Tequila or Beer (Optional)
1 tsp cumin
1 tsp chili powder
1 tsp oregano
1 tsp garlic powder
1 tsp red pepper flakes
3 5.5-oz cans V-8 Juice
1.25oz packet Old El Paso Taco Seasoning
1 cup TVP (Textured Vegetable Protein)
All spices and herbs should be adjusted according to taste.
In soup kettle, crock pot or large saucepan, over medium heat, saut
onions in juice from cans of beans. Once onions are tender, add
beans, tomatoes, herbs and spices (except Old El Paso Taco Season
packet), stir well to mix, lower heat to simmer, cover pan.
In a microwavable two cup measuring cup, measure TVP, add Old El
Paso Taco Seasoning Packet, mix thoroughly. Then add three cans
V-8. Stir TVP, season packet and V-8 mixture thoroughly. Microwave
on high for four minutes. Stir, then add to the simmering pot.
Stir the entire chili mixture, simmer, stirring occasionally, for
thirty minutes to an hour (it's best after the flavors blend,
usually next day).
