WHITE CHILI

1 pound white beans
6 cups chicken broth, fat free
2 cloves garlic, minced
2 whole onions, chopped
1 tablespoon canola oil
8 ounces green chiles, chopped
1 teaspoon cumin
1 1/2 teaspoons dried oregano
1/4 teaspoon cayenne
4 cups chicken breast halves without skin, cooked and diced
3 cups Monterey jack cheese, grated

Combine beans, chicken broth, garlic and 1/2 of the onions in a
large pot and bring to a boil. Reduce heat and simmer until beans
are very soft (3 hours or more - add more broth if necessary.)

Saute remaining onions in oil until tender. Add chlies and seasonings
and mix thoroughly. Add to bean mixture. Add chicken and continue
to simmer 1 hour.

Serve topped with grated cheese.
