There have been several comments that these recipes for churros can cause excessive splattering and popping of the oil. I have not made any of these recipes, so I couldn't tell you either way.

Churros Yields 44 Churros
1/2 cup water 2 eggs salt 1/2 tsp vanilla 1/2 tsp powdered sugar, sifted 4 Tbls butter 1/2 cup flour
Preheat the oil in the deep fryer. Combine the water, salt, sugar and butter in a saucepan. Heat until the butter melts. Bring to a full boil over medium high heat. Add the flour all at once. Remove from the heat. Use a spoon to beat until the batter forms a thick paste which separates from the pan. Beat in the eggs until the batter is smooth and shiny. Stir in the vanilla. Let stand for 15 minutes. Fill a large pastry bag or cookie press with the batter.
Fit with a large star tip. Squeeze the mixture into the deep fryer, forming a ribbon 4" to 5" long. Use a knife to cut off the ribbon. Fry until golden brown. Repeat with the remaining dough. Drain the cooked churros on paper toweling. Sprinkle sifted confectioners' sugar over. Serve warm.
