CHOCOLATE CHIP COOKIES
Makes 100 dozen cookies.
12 lb 8 oz. brown sugar
12 lb 8 oz. granulated white sugar
8 oz salt
8 oz vanilla
1 lb 8 oz. nonfat dry milk
16 lb 10 oz. shortening
12 lb 8 oz. whole eggs
4 1/2 oz. baking soda
25 lb all-purpose flour
27 lb 8 oz. chocolate chips
Cream sugars, salt, dry milk, vanilla, and shortening until smooth.
Add eggs in two stages and mix well after each addition. Blend
soda and flour. Add and mix just until incorporated. Mix in
chocolate chips. Deposit dough in 1/2-oz. increments on greased
or paper-lined pans. Bake at 375 degrees F for 10 to 12 minutes
or until browned at the edges.
