CHOCOLATE-CINNAMON MERINGUES
nonstick cooking spray 2 egg whites 1/2 tsp vanilla 1/4 tsp cream of tartar 1/4 tsp ground cinnamon 2/3 cup sugar 2 Tbsp unsweetened cocoa powder
Spray a cookie sheet with nonstick spray; set aside. Combine egg whites, vanilla, cream of tartar and cinnamon in a small mixing bowl. Beat with an electric mixer on medium speed till soft peaks form.
Stir together sugar and cocoa powder. Add sugar mixture to egg whites, 1 Tbsp. at a time, beating on high speed about 5 minutes or until mixture forms stiff peaks and sugar is dissolved. Spoon egg white mixture into a decorating bag fitted with a large star tip. Pipe 1 1/2 inch mounds 1 1/2 inches apart on prepared cookie sheet. Or drop by rounded teaspoonfuls. Bake in a 325 degree oven about 20 minutes or till bottoms are lightly browned and cookies are set. Remove from cookie sheet; cool on wire racks.
Makes 36 meringues.
