Brazilian Coffee Cookies

1/2 cup sugar 1/2 cup packed brown sugar 1/3 cup shortening 1 egg 1 tablespoon milk 1 and 1/2 teaspoons vanilla 1 and 1/2 cups flour 2 tablespoons instant coffee powder 1/2 teaspoon salt 1/4 teaspoon baking soda 1/4 teaspoon baking powder
Heat oven to 400 degrees. Mix sugars, shortening, egg, milk and vanilla. Stir in remaining ingredients. Shape dough into 1-inch balls. Place about 2 inches apart on ungreased cookie sheet. Flatten to 1/8-inch thickness with greased fork dipped in sugar (press only in one direction) or with greased bottom of glass dipped in sugar. Bake until light brown, 7 to 8 minutes. Makes about 3 and 1/2 dozen cookies.

Everyone really enjoyed these cookies, especially with a cup of coffee. I added chocolate chips, yumm, even better. They disappeared quickly, and I had wanted to save some for the girls in the office. Definitely thumbs up on this recipe, have made it three times in two days.

Husband & grandson were at the cooling rack on the first batch. Grandson ask for a batch while in Army basic training. Seattle being a coffee city I sent my son a batch and he was very pleased.
