CRANBERRY COOKIES
1 1/2 cups flour 1/2 tsp baking powder 1/4 tsp salt 1/2 cup vegetable shortening 3/4 cup powdered sugar 3 tablespoons milk 1 tsp. Amaretto 3/4 cup cranberries, fresh or dried, chopped fine 1/2 cup flaked coconut
Combine flour, baking powder and salt. In a large bowl, cream shortening and powdered sugar. Beat in the milk and Amaretto. Gradually blend in the dry ingredients. Divide the dough in half. Form each half into a log 1 1/2" in diameter. Roll in coconut. Wrap in waxed paper and chill for 8 hours. Preheat oven to 375 degrees. Cut the logs into 1/4" thick slices and place each slice 1" apart on ungreased baking sheets. Bake for 12-15 minutes, until lightly colored. Transfer to wire racks to cool.
NOTE: If using dried cranberries, cover cranberries with boiling water and plump for 10 minutes before chopping. Yield: 3-4 dozen
