EMPIRE COOKIES
2 cups flour
2/3 cups butter
1 tbsp baking powder
pinch salt
1/2 cup sugar
1 egg
1 tsp vanilla
Mix sugar, butter till fluffy, add egg and vanilla. Mix flour,
sugar, and powder. Add a bit a time. Roll out mixture in between
2 sheets of wax paper. Should be 1/4 inch thick. Bake at 350 for
8-10 minuets.
When cooled spread raspberry jam, top with another cookie and ice
with vanilla icing . I use can frosting or you can make your own
icing.
