Fortune Cookies
1/2 C melted butter
3 egg whites
3/4 C sugar
1/8 t salt
1/4 t vanilla
1 C flour
1 t instant tea powder, optional
2 t water
Mix egg whites, sugar and salt. Stir in remaining ingredients.
Chill for 1/2 hour. Preheat oven to 350 degrees. Drop 2 cookies
on a greased cookie sheet. Bake 3-5 minutes. Fold quickly.
You can only make two at a time as the cookies cool and harden
quickly. Wearing a pair of gloves helps a lot with the folding
unless you have asbestos fingers. To fold them you place a fortune
in the middle, fold the cookie in half and then fold the ends
together. Place the cookie in an egg carton to help hold its shape
until cool.
