Chewy Ginger Cookies
3/4 cup shortening 1 1/4 cup sugar-divided 1 egg 1/4 cup molasses 1 tsp vanilla extract 2 cup all-purpose flour 1 tsp ground cinnamon 1 tsp ground ginger 1 tsp baking soda 1/2 tsp salt 1/2 tsp ground cloves
In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, molasses and vanilla; mix well. Combine dry ingredients; add to creamed mixture and mix well. Roll into 1-in balls; roll in remaining sugar. Place 1 1/2 in apart on ungreased baking sheets. Bake at 375 F for 10 minutes or until lightly browned. Cool on wire racks. Store in an airtight container. Yield: about 4 dozen.

MY favorite part of these cokies is that they are CHEWY and GINGERY! Two things I love in Ginger cookies!
