Ground Raisin Cookies
1 cup butter or margarine 1 2/3 cups sugar 2 eggs 2 cups oatmeal 2 cups flour 1 tsp baking soda 1/2 tsp salt 1 cup raisins (measure then grind) 1 tsp vanilla 1/2 cup chopped walnuts
Mix thoroughly butter, sugar, eggs and vanilla. Mix in ground fruit. Combine dry ingredients except oatmeal and nuts; stir in. Add oatmeal and nuts and mix well. Form into small balls, about the size of a walnut. Put on ungreased cookie sheet and flatten with the ball of your hand. Bake 9-10 minutes at 350. Makes about six dozen.
Note: Try a combination of ground raisins, ground dates, and ground craisins (dried cranberries). Also dried apricots and dried cherries. Try sunflower seeds and cashews in place of walnuts.
