Gumdrop Cookies

1 1/4 cup all-purpose flour 1 cup quick-cooking oats 1 1/3 cups finely cut-up gumdrops (any flavour except licorice) 1/2 teaspoon each baking powder and baking soda 1/4 teaspoon salt 2 sticks (1 cup) butter or margarine (not spread) at room temp. 1 cup packed brown sugar 1 teaspoon vanilla extract 1 large egg
Heat oven to 325F. Lightly grease cookie sheet(s)
In a large bowl, mix flour, oats, 1 cup of gumdrops, the baking powder, baking soda and salt until blended
In another large bowl, beat butter, sugar and vanilla with electric mixeer until fluffy. Beat in egg until blended. With mixer on low speed, gradually beat in flour mixture, just until blended.
With floured hands, roll slightly rounded teaspoons of dough into 3/4 inch balls. Place on prepared cookie sheets 2 inches apart. Decorate tops with remaining 1/3 cup cut-up gumdrops
Bake 12 to 15 minutes or until golden brown Cool 5 minutes before removing to a wire rack to cool completely. Store airtight up to 2 weeks.
