Lemon Fire Crisps
2 sticks butter or margarine, room temperature 1/2 cup sugar 1 tablespoon lemon juice 2 tablespoons grated lemon peel 1 egg 2 1/4 cups flour 1 teaspoon cayenne powder 1/4 teaspoon salt 1/4 teaspoon baking powder
Preheat oven to 400 degrees. Cream the butter and sugar until light and fluffy. Add the lemon juice, lemon peel, and egg and beat well. Sift the dry ingredients together. Beat into the butter mixture. Place the mixture into a cookie press, and force the dough onto an ungreased cookie sheet. Bake for 8 minutes or until cookies are lightly browned.
Yield: 6 dozen

I make these at Christmas and always get asked for the recipe! I make sure to warn people though, they have a pretty good zing. You could leave out the cayenne and they would still be a nice lemon cookie. They freeze well also. Instead of using a cookie press , I make as refrigerator cookies;form into a roll on waxed paper, freeze and coat the roll in red sugar, slice into thin rounds and bake.
