Madeleines
4oz castor sugar 4oz butter or margarine 4oz self raising flour grated rind of one lemon 2 large eggs
Beat everything together just until blended. Spoon into greased madeleine trays - shell shaped, (makes 24) and bake at 200C for 10 minutes. Ease out of tins and cool on wire rack.
