Mincemeat Cookies
1/4 cup shortening 1/2 cup sugar 1 egg,well beaten 1 cup mincemeat 1 1/4 cup all-purpose flour 1 1/2 tsp baking powder 1/8 tsp salt
Preheat oven to 350F (moderate). Cream shortening and sugar together. Add well beaten egg, then mincemeat. Mix thoroughly. Sift dry ingredients together; add to mincemeat mixture. Mix well. Drop by spoonfuls on a greased cookie sheet. Bake for 10 minutes or until done. Yields 3 dozen.
Homemade Canned Mincemeat
20 lbs green tomatoes 4 lbs sultana raisins 1 lb currants 6 lbs apples, peeled and cored 1 lb chopped mixed peel 2 tbsp pickling salt 8 cups sugar 1 tsp cinnamon 1 tsp ground nutmeg 1 tsp ground cloves 1 lb butter 1 cup vinegar juice of 2 lemons
Put tomatoes through meat grinder,cover with boiling water and let sit overnight. In morning, drain and cover again with boiling water; let sit 2 hours; drain well. Add raisins,currants, pickling salt, sugar, mixed peel, spices and apples making sure to to chop apples in meat grinder; bring to a boil slowly.
Simmer on lowest heat for 3-4 hours, stirring often to prevent scorching. Just before canning, add butter and melt, then add vinegar and lemon juice. Heat through.
Ladle into hot sterilized jars and seal. Makes 16 to 17 pints.
