Surprise Sandies Servings: Makes about 36 cookies 1 cup (2 sticks) butter or margarine, softened 1/3 cup granulated sugar 2 teaspoons water 2 teaspoons vanilla extract 2-1/4 cups unsifted all-purpose flour 1 cup finely chopped pecans 1/2 of a 27 ounce jar (1-1/4 cups) mincemeat 1/2 cup sifted powder sugar Preheat oven to 325. With mixer, beat butter and granulated sugar in large bowl until combined. Add water and vanilla. Beat well. Stir in flour and nuts. Shape dough into 2-1/2 inch circles, using about 1 tablespoon dough for each. Top each with slightly rounded teaspoon of mincemeat. Shape dough around mincemeat. Place cookies, seam side down, on ungreased cookie sheet. Bake 20 minutes or until bottoms are lightly browned. Remove from baking sheets. Cool on wire racks. Place powdered sugar in plastic bag. Add cookies, a few at a time, and shake gently until coated. Store covered in the refrigerator.
