SEARCH RECIPES: LOCATION: Recipes >> Cookie Recipes >> Oatmeal Coconut    Oatmeal Coconut Oatmeal Coconut Cookie 1 cup brown sugar 1 cup white sugar 1 cup butter 2 eggs 1 cup oatmeal 1 cup coconut 1 cup pecans 1 tsp. baking soda 1 tsp. baking powder 1/4 tsp. salt 2 1/2 cup flour 1 tsp. vanilla Mix sugars, butter, eggs and vanilla. Mix dry ingredients together, then add to first mixture. Add oats, coconut, and pecans last to the mixture. Roll into balls the size of a walnut and flatten. These are light and crispy around the edges and soft & chewy in the center with a buttery flavor. I think the coconut is more for texture than taste as it isn't really noticeable. I leave out the nuts and use 1/2 cup less flour. Use a cookie scoop to measure and these cookies turn out completely uniform in shape, look like store bought.
