Oatmeal Peanut Butter Cookies
2 c. oats
1 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. peanut butter
3/4 c. margarine
1 c. packed brown sugar
1/2 c. white sugar
2 eggs
2 tsp. vanilla
Preheat oven to 350 degrees F.
Stir oats, flour, baking powder, baking soda and salt. Beat peanut
butter and margarine until smooth. Add sugars, mixing well. Beat
in eggs and vanilla. Add oat mixture. Shape into 1-inch balls;
chill dough if too soft to handle. Place 2 inches apart on greased
cookies sheets. Flatten with floured fork in crisscross pattern.
Bake 8-10 minutes.
