Chewy Oatmeal Spice Cookies 5 1/4 cups brown sugar, firmly packed 3 1/2 cups granulated sugar 1 3/4 cups unsalted butter, softened 1 quart plus 1 cup apple butter or applesauce 14 egg whites or 7 whole egg 3/4 cup plus 2 Tbs. skim milk 1/4 cup plus 1 Tbs. vanilla extract 10 1/2 cups all purpose flour 2 Tbs. plus 1 tsp. baking soda 2 Tbs. plus 1 tsp. ground cinnamon 1 1/4 Tbs. salt 1 3/4 tsp. nutmeg 3 3/4 lbs. quick or old fashioned oatmeal, uncooked 7 cups raisins or dried mixed fruit, diced if mixed fruit Preheat oven to 350 F. Lightly spray a cookie sheet with nonstick cooking spray. Beat together sugars and butter until well blended. Add next 4 ingredients and beat well. Combine flour and next 4 ingredients in another bowl. Stir into sugar mixture. Stir in oatmeal and raisins and mix well. (Dough will be moist.) Drop by rounded tablespoonfuls onto prepared cookie sheet. Bake 10-12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet and remove to wire rack. Cool completely. Store in tightly covered container.
Variation: Easy Bar Cookies: Spread dough evenly onto bottom of an ungreased 13x9 inch baking pan. Bake 25-30 minutes or until edges are light golden brown. Cool completely and cut into bars. Store tightly covered.
