Oatmeal Cookies
Yield: 48 Cookies
1 c butter
1 c brown sugar
1/2 c sugar
2 eggs
1 ts vanilla
1 1/2 c flour
1 ts baking soda
1 ts cinnamon
1/2 ts salt
3 c Quaker Oats
1 c raisins
Preheat oven to 350F.
Beat together butter and sugars until creamy. Add eggs and vanilla;
beat well.
Add combined flour, baking soda, cinnamon and salt; mix well. Stir
in oats and raisins; mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake
10-12 minutes. Cool 1 minute on sheet and then remove to rack.
Bar cookies: Press dough into bottom of ungreased 13 x 9" baking
pan. Bake 30-35 minutes.
