Peanut Butter Chocolate Chip Cookies

Yield: About 4 dozen cookies
2 1/2 cups all-purpose flour 2 teaspoons baking soda 1 cup (2 sticks) unsalted butter, softened 1 cup granulated sugar 3/4 cup packed light brown sugar 3 large eggs 1 1/2 teaspoons pure vanilla extract 10 ounces (about 1 1/4 cups) peanut butter 1 cup semisweet chocolate chips
Heat oven to 325 degrees. Have ungreased baking sheet(s) ready. Sift together flour and baking soda.
Beat butter and both sugars in large bowl of electric mixer on high speed until light and fluffy, about 2 minutes. Add eggs and vanilla; mix well. Stop the mixer and add peanut butter. Mix on low speed just until combined. Fold in the flour mixture and chocolate chips.
Using a scant tablespoon for each, drop cookies onto baking sheet, spacing them 2 inches apart. Bake until lightly browned, 12 to 14 minutes. Transfer to a wire rack to cool.

Whoever submitted this recipe was a genius! I cannot bake worth squat, and these cookies turned out absolutely perfect. There were really no special ingredients I needed to buy, everything I needed was pretty much already in my kitchen. I substituted a butter substitute instead of butter, but they turned out great anyways. They were so good, I woke my kids up in the middle of the night, and they were so glad I did. FIVE STARS and thank you!!!
