Pineapple Drop

Pineapple Drop Cookies
1 1/2 c. sugar
1/2 c. shortening
2 beaten eggs
1 small can crushed pineapple
2 tsp. vanilla / grated rind of orange
1 tsp. baking soda
3 c. flour
Cream shortening and sugar until fluffy. add eggs and beat well.
add flavoring. mix flour and soda and add alternately with pineapple.
drop by heaping teaspoonfuls on greased cookie sheet and bake to
a golden brown, 10-15 minutes, in a 400 F oven.
Note: The dough will be very stiff when you are finished adding
the flour.
