Pine Nut Cookies
2 eggs 1/2 cup superfine sugar 1/3 cup flour 1 cup pine nuts 2 tbsp butter or 1 tbsp heavy cream
Beat the eggs well, then add sugar and continue to beat until the mixture is pale and thick, approximately seven to 10 minutes. Stir in the flour and pine nuts, and then add the butter or cream. On a floured board, spread out the dough by hand to avoid crushing the pine nuts, and cut it into rounds with a glass. Place the rounds on buttered or oiled baking sheets and bake them in a preheated 400 deg. F oven for 30 minutes, or until delicately browned

1/3 cup flour?, July 18, 2004 - 06:44 PM

Hi, I am not sure if you meant 1/3 cup of flour. You said "make rounds with a glass," but my dough was way too liquid to use a cookie cutter. My first thought was "not enough flour" and so I used more until it was rollable. The outcome was alright, but almost not sweet at all. Should have I spooned the mix instead?
