Potato Chip Cookies
1 cup vegetable shortening 1 cup powdered sugar 1 1/2 cups flour 1 teaspoon vanilla extract 1 1/2 cups potato chips, crushed Powdered sugar
Preheat oven to 350 degrees. In a large bowl, cream shortening and powdered sugar. Stir in the flour. Beat in the vanilla extract. Fold in the potato chips. Drop the dough by spoonfuls 1 1/2" apart onto ungreased cookie sheets. Bake 15-18 min., until lightly colored. Sprinkle with powdered sugar and transfer to wire racks to cool.
NOTES : It is best to use "lite" potato chips because they are less oily. You can substitute water for the vanilla extract and use one of the many flavored potato chips available. Sprinkle with onion powder instead of powdered sugar.
