PUMPKIN COOKIES
2 cups flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 tsp salt 1 cup sweet butter, softened 1 cup sugar 1 egg, beaten 1 cup pumpkin 1 cup nuts, chopped 1 tsp vanilla
Preheat oven to 350 degrees. Grease baking sheets. In a large bowl, sift the flour with baking soda, baking powder, cinnamon, and salt. Set aside. In separate bowl, cream butter at medium speed until light. Gradually beat in sugar, then egg and pumpkin, beating until smooth. Add the flour mixture, and beat at low speed or by hand, until well mixed. Stir in nuts and vanilla. Drop by rounded teaspoon about 2 inches apart onto the baking sheets. Bake for 12 to 15 min, or until lightly browned. Makes about 6 dozen.
