Great Pumpkin Cookie
4 cups flour 2 cups quick uncooked oats 2 teaspoons baking soda 2 teaspoons ground cinnamon 1 teaspoon salt 1-1/2 cups butter, softened 2 cups brown sugar 1 cup sugar 1 egg 1 tsp. vanilla extract 1 can (16 0z.) solid pack pumpkin 1 cup semi-sweet chocolate morsels
Preheat oven to 350 F. Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. Bake at 350 F. for 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks.
Dough may be frozen in air-tight container. Thaw in refrigerator; bake as directed.
Decorate using icing or peanut butter to affix assorted candies, raisins and nuts.
Variation: Substitute 1 cup of raisins for chocolate chips. This makes 32 LARGE cookies.
