Pumpkin Walnut Cookies 1/2 cup butter 1 1/2 cups packed brown sugar 2 large eggs 1 cup pumpkin, cooked or canned 1 teaspoon vanilla 1 teaspoon grated lemon rind 1 teaspoon lemon juice 2 1/2 cups flour, sifted 3 teaspoons baking powder 1 teaspoon salt 1 1/2 teaspoons pumpkin pie spice 1/4 teaspoon ginger 1 cup walnuts, coarsely chopped Cream butter and sugars until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla, lemon peel and juice. Resift flour with baking powder, salt and spices; blend into butter mixture. Stir in walnuts. Drop by Tbs. onto greased baking sheets 2" apart. Bake 375 degrees for 12-14 min.
NOTES : To decorate: Spread with a vanilla butter cream frosting and make a "face" with walnut pieces and candy corn.
