Refrigerator Cookies Yield: about 30
4oz/125g butter scant cup caster sugar 1 egg 1 teaspoon vanilla 1 3/4 cups flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt
Cream butter and sugar. Add egg and vanilla and mix well. Sift together flour, baking powder, salt and added dry ingredients (if using) and mix in. (If dough is too dry to come together, add milk about 1 dessertspoon at a time until dough is just damp enough to form a ball.) Chill dough for 30 minutes. Form into 2 rolls about 3cm (1 1/2") in diameter. Wrap in plastic wrap or aluminium foil and store in the fridge or freezer until required.
To use: Unwrap dough and cut off slices 1cm (1/2") thick as required. (Remaining dough can be re-wrapped and put back in storage.) Place on an ungreased baking sheet and bake at 350F/180C for 10-15 mins. Cool on wire racks.
FLAVOUR SUGGESTIONS:
Coconut: Add 1 cup of dessicated shredded unsweetened coconut with the flour.
Choc chip (perfect for those frozen cookie dough moments): Add 1/2 cup chocolate chips with the flour.
Flavoured: Omit vanilla. Add 1 teaspoon of your favourite flavouring essence (eg orange, lemon, almond) and appropriate food colouring if desired.
Chocolate: Omit 2 Tablespoons flour. Add 2 1/2 Tablespoons cocoa with the remaining flour.
Spice (or cinnamon): Add 2 1/2 teaspoons mixed spice (or cinnamon) with the flour.
Coffee: Add 5 teaspoons instant coffee with the flour.
Nut: Add 1/2 cup chopped nuts with the flour.
Note: these can be combined, eg coffee-cinnamon, choc-choc-chip, orange-coconut.
