Ricotta Puffs
1 c. flour
1 tsp. baking powder
1 tbs. vanilla
2 eggs
1 lb. tub ricotta cheese
2 tbs. sugar
powdered sugar
Heat oil in a deep saucepan or fryer to 375. Mix all other ings.
except powered sugar. Carefully, add a tbs. of mixture at a time
to hot oil. Within a minute, balls will form puffs and turn a
golden brown. Drain on paper towel and sprinkle with powdered
sugar. Serve warm. Makes 2 doz.
