RUSSIAN TEACAKES (about 4 dozen) Sometimes called Mexican Wedding Cakes
1 cup butter 1/2 cup sifted confectioner's sugar 1 tsp. vanilla 2 1/4 cups sifted all-purpose flour 1/4 tsp. salt, sifted with flour 3/4 cup finely chopped nuts
Mix butter, sugar and vanilla thoroughly. Stir in sifted flour/salt mixture. Stir in nuts. Chill the dough for 1 hour or overnight, tightly covered. Preheat oven to 400F. Roll dough quickly into 1" balls with hands - don't overhandle or will warm up too much - and place on ungreased cookie sheet. Space them closely, since they don't spread very much. Bake 10 - 12 min, until set but not brown. While still quite warm, roll in confectioner's sugar. Cool on fine mesh rack or cool cookie sheet. Roll in sugar again.
Optional: At second sugaring, instead of rolling in conf. sugar, dip bottoms in confectioners' sugar and roll tops in decorator sugar, or use all decorator sugar.
