Snickerdoodles
1 cup soft crisco or butter 1 1/2 cups sugar 2 eggs 2 3/4 cups flour 2 tsp. cream of tarter 1 tsp. baking soda 1/4 tsp. salt Cinnamon Sugar
Mix crisco, sugar and eggs well. Stir in the remaining ingredients. Roll dough into small balls. Then roll each ball in a mixture of cinnamon and sugar. Bake at 400 degrees F for 8 to 10 minutes.
The key to these is not to overbake. The top of the cookie will "crack". When this happens take them out of the oven and let them sit on the hot cookie sheet until cool (this will finish baking them - but won't overbake them).
