Thumbprint Cookies
1/2 cup butter, softened 1/4 cup light brown sugar 1 egg, separated 1/2 tsp vanilla 1 cup flour 1/4 tsp salt 3/4 cup finely chopped nuts Jelly or Jam (grape or strawberry)
Mix butter, sugar, egg yolk and vanilla in a bowl. Work in flour and salt. Shape dough by teaspoon into 1 inch balls. Beat egg white in a separate bowl. Dip each ball into the egg white, then roll ball in nuts, and then place 1 inch apart on an ungreased cookie sheet. Squash each ball with your thumb. Bake at 350F for 10 minutes until golden brown. Then fill each thumb indentation with a blob of fruit jam or jelly.
This recipe makes 3 dozen cookies.
