English Toffee Cookie
1 cup butter 1 cup brown sugar, (packed) 1 egg, separated 2 cups flour 1/2 cup finely chopped pecans
Melt butter and mix in the brown sugar. Add one beaten egg yolk and mix well. Then add flour and mix; pat the mixture in a jelly roll pan. Beat the egg white and spread over the top. Sprinkle chopped pecans over beaten egg white. Bake at 350 for 30-35 minutes. Cut immediately into 48 squares.
